200 g self raising flour
100g corn flour or rice flour
250g soft salted butter at room temperature
100g castor sugar
Add all ingredients together to form a stiff dough. Work in with a spatula and then with your fingers.
Press the dough gently with your fingers into a 32cm x 23cm tin and smooth the top.
Brush the top with lightly with water and dust with a little castor sugar.
Bake for 5 mins at 180 degrees then reduce to 160 degrees and bake for a further 20 mins.
Leave to cool and cut it up and enjoy.
